The Glycaemic Index (GI) is a measure of the power of foods (or specifically the carbohydrates in a food) to raise the blood glucose levels after consumption. Low-GI foods have less impact on blood glucose compared with high GI foods.

Recent studies indicate that the risks of diseases such as diabetes, cardiovascular disease and cancer are related to the GI of the overall diet.  

Knowledge of the GI of foods is an important parameter for the food industry, which can be a differentiating factor in the market. In fact, the WHO recommends the inclusion of the GI value on food labels, highlighting the relevance of its measurement.
